A Refined, Wine-Inspired Flavor
Cafe Nouveau offers a distinctive flavor profile reminiscent of red wine and cherry liqueur. Its fragrant fruity notes are complemented by gentle sweetness, a rich body, and a surprisingly generous aftertaste. Carefully selected beans from different coffee-growing regions are blended to highlight their individual characteristics while achieving a harmonious balance of aroma, acidity, sweetness, and depth.
Innovative Hydrogen Roasting Technology
One of the defining features of Cafe Nouveau is UCC's innovative hydrogen roasting technology, developed to bring out the natural character of coffee beans while supporting coffee production with reduced carbon emissions.
Unlike conventional roasting methods that use traditional fossil-fuel heat sources, hydrogen roasting uses hydrogen as its heat source and does not produce CO₂ directly from the roasting process. The technology also allows precise temperature control, helping UCC develop distinctive roasting profiles that enhance the beans' natural flavor and aroma.
For Cafe Nouveau, a carefully developed roasting profile incorporates a resting stage early in the roasting process, with meticulous temperature management. This approach helps create the coffee's signature wine-like fragrance, refined acidity, gentle sweetness, rich body, and deep, lingering finish—all achieved using coffee as the sole ingredient.
In April 2025, UCC began mass production of hydrogen-roasted coffee at its UCC Fuji Plant in Japan, using a large-scale hydrogen roasting machine described by the company as the first of its kind in the world.
A More Sustainable Approach to Coffee
Cafe Nouveau also supports a more sustainable coffee future through responsible sourcing. More than 50% of the coffee beans used are certified as sustainably sourced, helping support responsible coffee production practices.
